  • 2 cups chocolate sandwich cookie crumbs

Preparing the Crust

In a mixing bowl, combine the chocolate sandwich cookie crumbs with the melted butter. Stir until the crumbs are evenly coated. Press this mixture into the bottom of a 9-inch springform pan, forming a firm and even crust. Place the pan in the refrigerator to chill while you prepare the filling.

In a separate mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add the powdered sugar and vanilla extract, continuing to beat until well combined. In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.

Assembling the Cake

Remove the crust from the refrigerator. Spread half of the cream cheese filling evenly over the crust, creating the first layer. Set aside a small portion of the filling for decoration later. In a microwave-safe bowl, melt the semi-sweet chocolate chips in the microwave, stirring at 30-second intervals until smooth. Pour the melted chocolate over the cream cheese layer, spreading it evenly.

Adding the Final Layer

Pour the remaining cream cheese filling over the chocolate layer, smoothing it out with a spatula. Use a piping bag or a spoon to create decorative swirls or patterns with the reserved cream cheese filling on top. This step is optional but adds a lovely touch to the cake’s appearance.

Chilling and Serving

Cover the springform pan with plastic wrap and place the cake in the refrigerator for at least 4 hours or overnight to set. Before serving, carefully remove the sides of the springform pan.
